Grandma Sandine's Swedish Potatoe Sausage

Ingredients

For a little more than 5 lbs of finished sausage:

  • sausage casing
  • 1 ½ lbs leen pork – ground
  • 1 ½ lbs leen beef – ground
  • 2 medium onions
  • 2 lbs potatoes
  • ½ tsp pepper

Directions

  1. If you grind your own meat, grind pork and beef together so they mix well – medium grind.
  2. Grind onions and raw potatoes together.
  3. Add the salt and pepper, and about 1 cup cold water to ground ingredients so it will mix well; mix together by hand.
  4. Clean casing by washing it in luke warm water about 3 times.
  5. Stuff mixture into casing (use your meat grinder if you have one) – do not make them too full.
  6. Place finished sausages in a pan into cold water with 2 tbs salt added; cover with heavy plate so sausages stay well below water.
  7. Cook ½ hour (start with cold water so the sausages don't pop).
